This avocado bean salad is the perfect summer recipe, because it is made with foods high in antioxidants and high in fiber that makes you full and helps protect your body from free radical damage (a big problem during the summer due to high UV exposure).
This goal seems very easy and can be done, but even as someone who loves vegetables, I struggle to achieve that goal every day.
This recipe is gluten-free and vegetarian, but not bean-free, milk-free or vegan.
But you can easily make all this, by not adding feta cheese (oh wow, now milk and vegan free) or walnuts (nut free).
This addition is entirely optional and will not greatly affect the taste.
Enjoy this healthy & refreshing avocado bean salad.
- 1 red bell pepper
- ½ avocado
- 1-2 leeks
- 1 tablespoon vinegar
- 1/3 cup parsley
- 5 olives, pitted
- 1 tablespoon groundnut
- Black pepper, salt to taste.
- 1 cup of beans (can, rinsed and dried)
- 1 cucumber (medium size)
- 3 cherry tomatoes
- 1 small turnip
- ½ cup of spinach
- ½ cup of arugula
- 1 tablespoon olive oil
- Some feta cheese
- Cut the cucumbers, red peppers, turnips, spinach, arugula, parsley, olives. Cut a quarter of the tomatoes (optional), slice thin chives and cut the avocado.
- In a large salad bowl, combine the beans, everything you just cut, add vinegar and olive oil. Optionally, you can add feta cheese - I just squeeze it in my hand - no need to cut it; and peanuts. Taste the taste and if necessary - add salt & pepper.
