Sticky Sesame Chicken Pieces Slimming World
Ingredient
For Chicken
  • 1tsp Sesame Seeds (plus extras for decoration)
  • 1tsp powder stock (chicken / vegetables)
  • Salt & Pepper (to taste)
  • 2x Chicken Breast
  • 6tbsp Instant Mashed Potatoes
  • 2x eggs
  • 1tsp Chili Flakes
For sauce
  • Light Fry
  • 4tbsp Dark Soy Sauce
  • Dear 1tbsp
  • 1tsp Sesame Seeds
  • 4x Spring Onions (thinly sliced)
  • 3x Garlic Cloves (chopped)
  • 1x Fresh Red Chili (small diced)
  • 3/4 Pint Chicken Stock

Instructions
For chicken
  1. Preheat your oven to 180 degrees.
  2. Mix Smash, sesame seeds, chili flakes, powdered broth and salt & pepper.
  3. Cut the chicken into pieces and set aside.
  4. Beat the two eggs together.
  5. Spray a large cake tray with Light Fry.
  6. One by one dip the chicken pieces into the egg and then into the Smash mixture, making sure everything is covered. Place separately on a baking sheet. Spray with light Fry.
  7. After all the chicken is cooked, bake until crispy (aprox 15-20 minutes)
For sauce
  1. Over high heat, spray the pan with Fry Light and add leeks, garlic, and chili to fry.
  2. Add soy sauce and chicken stock, then add sesame seeds and honey.
  3. Reduce heat and simmer until thick.
  4. After the chicken is cooked add to the sauce and stir until every part of the chicken is coated.
  5. Serve on sticky white rice and fresh steamed vegetables.
