This Turkish Rice Burrito Bowl is an excellent family meal - sit and grab a bowl with your favorite topping.
There are already fast foods in the actual recipe, such as onions and peppers, but choose the side to increase the fast food even further.

Low Syn Turkey Rice Burrito Bowls
Ingredients
  • 1 cup (240ml) sweet corn (canned)
  • salt and black pepper
  • 1 jalapeno, seeds removed and finely chopped
  • 1 tbsp brown sugar (3 syns) or use sweeteners to free syn
  • 1 cup (240ml) black beans (canned)
  • 1 cup / 240 ml chicken stock
  • 450 g / 1 lb. turkey is extra lean or can use beef or alternative meat
  • 1 onion, finely chopped
  • 1 clove of garlic, crushed
  • 1 red bell pepper, finely chopped
  • 1 green bell pepper, finely chopped
  • 1/4 tsp chili (or add more if you like it spicy)
  • 1 cup / 240 ml of crushed tomatoes (or use a passata
  • 3 tablespoons of tomato paste
  • 1 tbsp cumin powder
  • 2 teaspoons chili powder
  • 2 teaspoons paprika
  • 1 teaspoon oregano
  • 1/2 teaspoon shallot powder
  • 1/2 teaspoon garlic powder
  • chopped green onion

Instructions
  1. Add rice to the pan, add 2 cups / 480 ml of water, season with salt and bring to a boil, reduce the heat and boil until the liquid is almost absorbed, turn off the heat, add the lid and set aside (the steam trapped under the lid will cook the rice perfectly).
  2. Add ground turkey, onion, mashed garlic, paprika into the pan over medium high heat and cook until browned.
  3. Add jalapeno, crushed tomatoes, tomato paste, broth, brown sugar and all the spices and stir. Bring to a boil. Reduce heat, add black beans and sweet corn and simmer for 20 minutes. (Check half way, just to make sure the sauce doesn't decrease too quickly, just add a little broth if needed)
  4. Lift the lid, then stir the cooked rice, until everything is mixed.
  5. Season as needed with salt and black pepper.
  6. Sprinkle with fresh chopped onions
  7. Spoon into a bowl and add the toppings of your choice.
